The idea by Chef John hails from Penang created by the culinary pioneers in the Malaysian state dated more than a dozen years ago. Who would have thought? The humble food stall’s signature dish is made from rice porridge cooked in pork and chicken broth before frying it in a heated wok along with dried shrimp, cuttlefish, and yam further topped with crispy lard and fried shallots.
