There’s no typo in case you are wondering. Yes, you are looking an authentic bowl of fried porridge.

The idea by Chef John hails from Penang created by the culinary pioneers in the Malaysian state dated more than a dozen years ago. Who would have thought? The humble food stall’s signature dish is made from rice porridge cooked in pork and chicken broth before frying it in a heated wok along with dried shrimp, cuttlefish, and yam further topped with crispy lard and fried shallots.
